Multiple doodad/tiles sets
Is there any way to use doodads/tiles from different types of maps ?
For example, can I use stone texture from City AND trees from Forest on single map ?

I know, and I'd like to do that but, that's sadly impossible :/

For some Doodads, this is actually possible, but not very efficient. Use the SpawnResource command in a trigger to spawn 'some' theme specific doodads at a specific location. For example, the American citizens and agents at the end of the game can be spawned this way. Just set the resource name to "citizens/citizen1" without quotes.

That's probably the only instance where that could be done. The America theme cannot be accessed normally, so it is really more of benefit of using anything from that theme.
Also the denizens/denizen1 and denizens/denizen2 can be used outside of hell.

The city theme does have pine trees for "TreeBackgrounds" and palm trees for "Trees", so it is somewhat possible to use the Forest theme trees with the city Stone terrain.
