Visual Mod Troubles
I subscribed to a few different skins on the workshop, but no matter what server I join, I NEVER see them. I know they're allowed on specific servers, but I have yet to find one. Is something just messed up or am I doing something wrong here?

Have you activated the mod?

What exactly do you mean by activate? This is what I did: Subscribed to different mods, downloaded them, played on server. Do I have to turn it on in the options or something?

Yes, in the menu, there is a button that says "MODS", click it and then activate the mod.
