plots not snapping to snap points. Green appears in correct place but plot appears skewed/slanted/all over the place. tested above and under water, on foundations and ceilings, vanilla, SS and CKFR. Functional, but messes with my OCD pretty bad.

yes, i noticed this too recently. it bothers me. the plots also do not seem to like being placed at angles on non-flat surfaces, also bugs me. this all worked fine back when i last updated the mod lol.
but the game has been changed and i guess i should be thankful the mod at least still functions considering how long back i updated it.
the mod needs a re-up perhaps, maybe just a re-cook will help.

The worst part is I can't even line it up manually because the green will snap to the foundation so I can't see what the final location will be. Is there a way I am not aware of to stop the plot from snapping at all?

dont think so.
what i did was stand right atop where i wanted it looked down, jumped and placed it. kinda worked.
need to recook the mod

Seems to have stopped working for me recently despite working before and I had not changed anything. After placing the crop plot down it will not allow me to place a seed in it. I cheated in some auto seed admin versions in an attempt to fix the issue but that also failed to seed (despite that it was the auto seed version). This is a recent development since it worked fine when I built my base around Halloween. After running into the issue I even tried removing my stacking mod in attempt to see if it was causing the issue and restarting the game to be sure it was properly removed but that failed to fix the issue. Sadly, looks like I might have to find another way to setup turrets for quez base defense.

EDIT/UPDATE: it seems the issue is with putting it on a quez platform saddle. After placing it on the ground (was gonna break it down for resources) it was seeded and working again. I then tried putting it on the quez again and it gave same issue but placing another 1 on the ground worked fine after that. Thus it must be something to do with placing those on the buildings I put on my Quez.

The snapping is actually an issue with majority of things. They seem to only try to snap to corners of ceilings/foundations instead of center, but for majority of things it doesn't actually place where it should be snapping to as shown. I'm playing with a couple different mods like the castle mod and some eco mods along with N+ instead of S+... And it shows the snap spot on various things, but it places exactly where you are looking and not where it's showing the snap. The N+ Glass Ceilings actually snap properly though, but I've tried it with wood, stone, and metal along with the CKF Villager and Keep foundations & ceilings and it does the thing where it shows it snap but places where you are looking. The glass ceilings from N+ are used on a bronto saddle btw, so there's no issues there.
