2.) The only way is to position yourself in a good manner behind the barrel, for cannons that would be crouching and swivels, well, standing. Try around a little and you'll get used to it.
3.) Holstering is mission specific as its done with scripts. A workaround in missions without holster script is to just put it into your vest (via drag & drop).
4.) Nothing changed, still works the same way. In case you are running other mods alongside Nassau there may be some mod conflicts though.
5.) The "freelook key" should do the trick (for me its ALT). If not doublecheck your keybindings and if it persists consider filing a bugreport on our discord.
6.) If there is no one using the pumps on a ship it will sink, not sure how fast it did for you but generally it takes a little while. At least it did for me thus far but I also didnt shoot a ship 5 times at point blank range.

I tried the put the gun into the holster option at the weekend - weirdly a bug crept in, every time i tried after a certain point you get auto-killed when opening your inventory. happened me and my coop buddy
No other mods activated.

The way it is mentioned in the field manual. Ctrl+A for left and Ctrl+D for right. You have to stand next to the steering wheel.
I stumbled over an interesting incident. I was able to steer the boat with Ctrl+A and Ctrl+D. I tried the mod again today and now it does not work properly: I can only steer to the right. To the left doesn't work.
I rebound the keys to the arrow keys ... same effect. To the right works, to the left doesn't.
I'm looking forward to have some cool boat battles going on. ;)

Currently changing flags is not possible, it is however coming with the next update if all goes well (looks pretty good at the moment).
We would like ai ships ourselves yet we ran into some issues trying to make the ai work. For now its not actively being worked on but i'm sure we will get to it again in the future. For now it is not a priority however.
When it is finished. We do not normally give dates.
Not sure if the sloop is stronger now but the sinking system was reworked. The closer you hit to the waterline the bigger the hole will be and the faster the ship will sink. To keep a damaged ship afloat you need to use the pumps.
