Personally I'd say you should at the very least get Falskaar and Helgen Reborn off the Nexus, since they're quest-line mods that are well voiced and fit the general game setup very well, and, hey, we all like quests, right? Plus, Falskaar has at least as much content as an official expansion pack, and Helgen Reborn is up there too, and they're free. So if you've finished the vanilla game and still have an itch to scratch, you could do worse than playing those.
Downside, Emma did use a cheap and crap mic, plus Vilja's accent is as thick as it gets, so some people do dislike her voice acting. Some even very strongly. Personally I love her, really, but you'll have to decide for yourself, really.
Really, that kind of thing depends on how much you care about how your character looks. If you want your character to fit a certain concept, be it samurai, or renaissance assassin, or whatnot, getting the props that fit that concept helps. If, however, you couldn't care less what your character wears, as long as they kill their enemies, or if the existing props are already what you wanted, you obviously don't need any extra props.
So, again, it's something YOU will have to decide for yourself, MY imagining my character as some ninja or some Talhoffer-educated renaissance landesknecht doesn't mean jack if your character concept is something compleely different, or if you don't care about any other concept than getting the job done.
So ! i find myself often looking around the workshop for cool mods. Sadly, i almost always only find mods that either add followers, houses, weapons or armour. (and the armour can usualy barely be called that since its for the girl and therefore shows more skin then it hides) But nothing that adds any actualy interesting quests, or fixes common bugs in Skyrim to make the gaming experience better... Sooooo yeah, this is as much a stattement as me asking you workshoppers...: Puh-lease make fix mods.
