I don't take map commissions any longer because too many server owners (read: most of them) and too many hired content creators (read: most of them) are willing to throw aside basic ethics and IP laws for the sake of profits.
In my case, I have one simple rule about messing with my crap: just ask me first. It's a simple request, and the minimum of effort shows me who is a decent human being, and who is a garbage human being.
If someone offers you money for something you don't have permission to use/edit, and you don't turn them down - or at least turn down the money - you aren't just lacking in ethics, you're an ♥♥♥♥♥♥♥.
The most you can do is sadly file a DMCA or a report on their accounts, and hopefully have action taken against them. A lot of these services like Patreon will very quickly take action, and in most cases terminate or suspend the offending accounts.
From my experience being in the same boat as FFox, your best option is to go to their Patreon or wherever else the money is exchanged, and submit a report/DMCA claim.
Do it in well-written, tone-neutral, and - most importantly - respectful and calm writing. Detail exactly what is stolen, with as much proof as you can possibly shoehorn in. Leave out personal attacks or bias-style writing, as they undermine your position.
If you make it clear without a doubt that the person making a profit off your work is doing so illegally, they're likely to get removed from the service(s) and you might even see a kickback in the best of situations.

And I won't talk about the "employer" who should simply see his rights to use the Workshop and Source SDK overall removed, engaging people to do the dirty and illegal job? Just to slap your name on it at the end? GTFO
Modders locking content behind a paywall, or charging for services related to the Source Engine should be careful.
Valve is pretty cool with that and don't really mind about people making a couple of bucks with some Source Engine but guys beware, read the ToS / EULA and you will notice that what you're doing is wrong. The day Valve (or some other third party companies) decide to kick in and and distribute sanctions, some people out there will see their rights to use SteamWorks tools and services removed.
I know a couple of people who had a couple of DMCA strikes and can't publish on the Workshop anymore despise their mod being available for free. So now imagine for "paid mods".
As for mappers, I recommend you to use heavy obfuscator(s) alongside other anti-decompile protections.
