Coping parts of a SV or HV
When repairing HV or SV how do you copy a part that is missing on the other side

CTRL Right click with a block selected on hotbar while pointing crosshair at the desired block to copy. Will copy the shape and texture of the block you are pointing at. You can even use a different type block such as copying a hardened Steel block using a regular steel block.

I have had problems figuring out how to do that, creatively challenged here, and now I can make my salvaged ship look new and sparkly again lol

One thing I am still stuck on though is, once you've copied the block, is there an easy way to mirror it, if it is an irregular shape, to swap over to the other side?

To mirror parts to the other side of the ship you can use Symmetry Mode on the "N" menu. Test it out with some blocks on the ground first to get the basic understanding of it, then you're good to go :)
