It's possible that witches should get more opportunities to ask for study, but I'd rather not make it a typical interaction ;)
Demons don't have much interest in turning others into demons (even in exchange for a soul), and mostly they aren't powerful enough to transform someone either (it can actually only happen with unstable sources if the demon is a guardian).
But reading what you wrote it occurred to me that it would be nice to be able to sign a pact with a demon, and get access to magic in exchange for a soul.
