How to start the mission to destroy the ring and by that the "War of the Ring"?
You need to have Shire or their overload as ally/subject. Then you should be able to start the mission in the mission screen. Make sure to use the refresh mission (or complete any other mission) as the game does not update available mission until you complete or abort one.

Is the "Protect the Coasts" task in the Gondor mission tree way too hard?
You need to EITHER build one of these fleets or conquer the provinces. The provinces themselves are not in the description, since it would make it unreadable. It is annoying that the indentation within the "OR" is incorrect, but that is a bug with the custom tooltip used to prevent the game from spamming every single coastal province there.

This mission is supposed to be hard but doable. It does have an extremely strong reward by enabling full use and full levies of all subjects except Rohan, which combined at the start of the game have like 2-3 times Gondor's army strength.

How does assimilation work?
Assimilation in WOTR works only by event and only in specific circumstances. The only exception from this are orcs, which "assimilate" any non-accepted culture by the default mechanic. For elves and dwarves there is no assimilation. You can cheaply accept other cultures from your species though (1% per culture instead of the normally much higher values).

The assimilation events for humans work in the following way:
- Assimilation is possible within the evil human groups ("low humans"), wihtin the non-edain good humans ("middle humans"). In this case the events pretty much reflect the normal assimilation. It happens all the time and the chance depends on dominant culture, reigion, temples and theatres. The first time this happens, you will get an event telling you about it.
- The third case is towards mixed-edain cultures, that is gondorian and bandanuaim. Any low and middle humans can be assimilated here, the assimilation is harder though. It only happens if an edain or mixed edain culture is the dominant culture. It is extremely unlikely if the religion is not the state religion. And again, the chance is increased by temples and theatres. Again, there is an event telling you the first time.
