For reference, using the age psycast combined with deathshield I have aged a prisoner to over 200 years old. Aside from a small tumor and a bad back he is completely fine! (the reason deathshield is necessary for this is that after a certain age threshold, a pawn instantly dies from heart attack when targeted with the age ability)
To properly fight off old age, you need either specific Archite genetics, or specific cybernetics. Or you need to get really lucky with the Vanilla Ancient Expanded super-soldier nanites.
On the gene side: No Senescence (prevents age-related conditions), Perfect Immunity, Ageless and Deathless. Combined, these four make a pawn functionally immortal, short of getting their head blown off.
Cybernetics: Bionic Spine, Synthetic Heart, bionic/archotech eyes. These would stop artery blockages, heart attacks, bad back and cataracts.
Super Nanites: Self-Resurrection, Redundant Stomach, Regeneration and Limb Regeneration. The first doesn't quite trivialize death, but it does allow your pawn to self-res after a couple days. The second removes the need for food. Regen and Limb Regen allow your pawn to regenerate any wound and any removed limb respectively.
