That's not outdated, that was the latest unstable branch. I'll get a log from the steam version too but I'm sure it was doing the same thing.
Config error in Highwayman_MainTurret: <color=#8059F2FF>ammoCountPerCharge</color> must be greater than 1.

I find it incredibly hard to believe that your versions are up to date.
Edit: Ah but I see I marked the wrong version in the change notes on steam. If that's what you were basing the latest off, I can understand the confusion. Latest is v1.5.1381 though, I'll fix the change notes.
Config error in Udar_MainTurret: ammunition is non-null but no defs are available to use as ammo. Either omit the field entirely or specify valid ThingDefs to use as ammo.

Also the Wisent description isn't correct: it says it can carry 1 driver + 7 passengers but it's actually 1 driver + 9 passengers
Restoring an IFV or Hermano does not unlock their respective techs. Restoring an LAV or a Big Rig does unlock the IFV and Hermano though, so this bug only partially breaks the tech.
I'm not sure what is causing it either, the xml seems fine so it's likely something C# related.

I experienced the exact same thing. The first Tier 3 vehicle I tried with, was quite disappointing.

I use a fairly extensive list, so conflicts should be visible as well. But I'm a tech dummy, so I have no clue which mod is responsible for one error or the other.
If anyone can tell me who to inform, I'll let them know.
