UG didn't include freight airports in the vanilla game, maybe there was a reason for it. All this mod does is to enable cargo instead of passengers on the airports and a few airplanes. The rest is up to the game itself.
There seems to be a generic problem with moving cargo over long distances, which airplanes in general does. If cargo (accepted by airports and planes) doesn't use it, is nothing that can be controlled by the mod.
Until we know more about the freight behaviours over long distances, there is unfortunately nothing I can do.
Did you try to replace one airplane and see if that alone broke the chain? What if you replace them one-by-one after checking that each one still got cargo?
