For faces I find the best highest res front facing, neutral lit photos of the subject as I can find, then use Photoshop to blend it into a default face.

Archive.org actually has a couple of wrestling theme albums for download.

I prefer ogg files but mp3s and other formats work too!

I use OBS to screen record YouTube videos usually, then I open them in Sony Vegas (or other Video Editor) and export a low res video with no sound.

If I want the sound to sync with the video I export an ogg from Vegas as well, maybe normalize the volume in sound forge (or other sound editor).

If I don't need the audio to sync with the video I will sometimes grab an mp3 if available (khinsider.com has a bunch of video game music I've used) and convert to ogg in soundforge.

Looks great! Also how do you make the titontrons? Or well get the videos for them.
