Why not make a second ship model, this one a dynamic prop, where the turrets would be moved by bone tools and joint tools?
This way you can have a complex collision model, with up to 40 independent parts. I tried it on some of the Gears models and it worked rather well.
It will not of course be enough for the larger ships, but atleast they will be solid to a degree.
