I WAS CONFUSED WHEN METAL STARTED PLAYING
Base game music right now is very limited and the tracks seem to repeat, this mod is great adding in those addition tracks. All we need now is for PDX to add in a music player so we can skip songs.
All you should need to do is open the mod's zz_CK2_music.txt file, located in Program Files (x86)\Steam\steamapps\workshop\content\1158310\2362491960\music by default.
Once you've opened it, simply rename the main_theme_track entry to anything other than what is already listed in the mod (I'd recommend just calling it ck2music0 if you're unsure). After that, save it and you're done!
Note: Simply deleting the main_theme_track entry will work to restore the vanilla CK3 theme, but it will also remove the CK2 menu music from the game entirely. Use the above method if you want to continue to hear it when in-game. You will also need to do this any time the mod is updated (though it shouldn't ever need updating).

Something important was updated with patch 1.3: you can now add conditions for the music to play:
"*Allow mood music tracks to have an is_valid for it they should be considered when picking the next track.
*Allow mood music tracks to weight the chance of being picked."
Is it safe to assume that it's a matter of changing all the can_be_interrupted fields in the config file to 'yes'?
I like the event\war declaration music and I also find that by default it usually ends up playing over the current track anyway so it just sounds weird.
