As for the tail hook, it's a feature I haven't yet added to the aircraft, so it currently serves no purpose. I may add one in the future using some kind of mag-all, but I am not sure yet.
In the meantime, I suggest using the trim settings by holding ALT in-flight and pressing the control keys accordingly.
Currently there is no enhanced tracking functionality on the missiles, they use a basic self-guided seeker setup. I've not done much work on weapon systems, so I only provided some simple ones so that people had something to use by default.
also, how do you fire missiles that TRACK other vehicles? every vehicle i use that has missiles doesnt track others
The screens are not touch-interactive, the hardpoint controller should automatically select the first available unguided bomb that it can find on your aircraft once you put "3" into the UFC.

For example, if you input "10" into the UFC it'll try to use the radar-guided missiles that are equipped on the aircraft by default.
