Projectiles are simply
<texPath>Things/Projectile/Cannon/HE</texPath>
and
<texPath>Things/Projectile/Cannon/HEAT</texPath>
<graphicClass>Graphic_Single</graphicClass> is wrong
it should be
<graphicClass>Graphic_StackCount</graphicClass> for the ammo stacks
And about balance it would be done with update soon with new PzIV type G & H.
