I also have an all-vampires necro empire that does more diversity with professions, and a draconian fire dragon cult where everyone is a fire dragon heir, and they're about as unpleasant as Smaug on a bad scale day.
You see the problem I am having with your suggestion is that it would actually limit the number of possible combinations (not to mention in a non-intuitive manner: e.g. why should a sailor be able to become a duelist, but not an assassin?) while a big part of the motivation for the two hero mods was to vastly increase the number of possibilities how a hero can be developed. Therefore decreasing that freedom of choice without real need would imho be a big mistake.
@CaptaiN AngekilL: The problem with profession descriptions is that unlike their specialisation counterparts the profession skills don't follow a ranged/melee/support theme but are chosen according to what would make sense lore-wise for the respective profession. Therefore almost every profession will include useful skills for either melee, ranged, support or even casting heroes and a description could do little to point you in the right direction. The changed attributes are really the most valuable information you can get there unless I was to explicitly list all the upgrades unlocked by the profession. (which you can look up in the pdf documentation of the mod!)
This mod would be greatly improved by a small maybe just a oneline description of each profession in the hero level up screen. Not that it really matters since i pick them anyways, but it just feels a little iffy when picking a profession you pay points to trade points, as in the bonuses and penalties on the first level are equal but you still pay level up points for it.

the WITCH unlocks Trickser I and Assasin I and
the SEAMAN unlocks Duelist I and Trickser I.

okay I got your point and since you as the author has the far better overview over the mod I believe you when you say "...but in the long run choosing a profession will always pay off."…..
