Because I seem to keep getting the same characters classes I didn't choose after rookie use and wanted to make sure I was doing it right before using it.
Do you have Mod Options Menu installed? Bring up the normal ingame options then wait a second or two.
I have both Mod Options Menu and Mod Config Menu running. When I open the Mod Options Menu menu :) I can see the Disable Any Class options. I haven't tried to use it though, next campaign I plan to replace the vanilla sniper with Lucubration's rework.
Do you have an idea on how to avoid this problem?

Most likely you have MCM installed and not MOM
The options screen shows up via the Mod Options Menu plugin that is listed as a "required item" by this plugin. It is accessed through the game's main options screen.
When does this Disable screen show up?
Because I would love the ability to only allow the vanilla classes normaly, but mod clases from the GTS
...Now if only there was a way to distinguish classes with the same name.
I'm not doing anything crazy in there, just using the built-in method to save a config file. It gets saved to "Documents\my games\XCOM2\XComGame\Config\XComDisableAnyClass.ini" in Windows; I'm not sure what the equivalent user config directory would be on the Mac.
If you want to avoid using the UI, you should be able to just create/edit the equivalent .ini file directly. The file format is like this, and uses the soldier class template names:
[DisableAnyClass.DisableAnyClass_Config]
ClassNames=Ranger
ClassNames=Grenadier
