The easiest way to see which files those are is to check the vanilla VC skin files in the data.pack.
It seems like somewhere in that UI file, Carstein's currency is set to the same as the Empire's and your skins file largely corrects this, just not entirely. Any idea where stuff like that is in the compilation folder since I took a look but it has quite a few values that I don't know.
No, as they essentially get the default vanilla UI, which is kinda unique for them at this point, as no other faction uses it with this mod.

That skin has been always a bit subjective, but it still resembles their flag system rather well.

I'm assuming you are talking about the Custom Battle listing. As per the description, that is unavoidable as the data that enables these factions for Custom Battle is in the same table as several other things such as skin assignments and if I were not to add these changes to the table, I would cancel out the Custom Battle assignments of my Unlocker, which is not desirable either.
As for the Bretonnia buttons, the game does some weird stretching of many buttons that is hard to deal with, which is why you sometimes see results like this. I guess I'll have to think of some alternatives for them when I get around to it.
I did also intend to change the Empire skin a bit but again, no time for it so far.
Does this mod need to make a list of all the faction's from the game, I know they change color too, but does it have to make this list ? I do not even use the mod to unlock the faction. What makes it look rather not aesthetically.
Ps. In Breton during the fight when you press esc, the red color is supposed to occupy 60% of the lines, 40% blue? Because they are not equal. And when you finish the fight and load the game. The "continue" button is displayed. He is red, then blue, again red and a little blue. So it has to be ? How can i make a screen saver (This error appears in a few other places but I'm not sure).

For now they get the Chaos skin which Norsca always had with this mod.
Maybe in the future, but probably not anytime soon as that is a lot of work for just one faction.

Should work perfectly fine even without updates, you just don't get the skins applied to newly added factions.
