Well I see the main pictures to add but it is the small one to the far right that shows up in the workshop searches; dont know how to add that one...
The picture on the right is the jpeg found with the packed files in the addonpacks folder.
For example the workshop item 'Helmet Light Replacement' would be found here after subscribing to it: <Drive>:\Steam\userdata\<Steam ID>\244030\local\addonpacks

So if you want to change the main image for your workshop item, I believe you'd have to change the .jpg found in the location I showed above with another image. Then you'd upload your mod (in-game) to the workshop so it overwrites the current one.
You may also need your photo in a RAW format, meaning you just pasted a screenshot into photoshop or gimp and then save it as something else. Instead of opening a .jpg or other photo format and saving that after editing it.

I've never changed the main image myself since I've already had the one I wanted picked out. But I certainly would try doing what I stated if I wanted to try changing it.
