"Entities" is the folder containing the game sprites. There's one for each character in the game, including the player characters (though their sprites are split into heads and bodies).
"Bestiary" is the folder with all of the portraits, used in character selection and training screens.
"GUI" contains the game's heads-up display as well as the portraits shown before bosses.
"Items" has all of the item icons, which hover on the ground when you find them in a level, and also display in the HUD when you've collected the item.
"Level" has all of the walls and floors in it. Shop walls are the same regardless of zone.
"Particles" contains miscellaneous graphical animations, such as kicking up dirt every time the player moves and the skulls that drop when a skeleton is defeated. This folder also has Death Metal's shield.
"Spells" contains the animation graphics for the spells with visual effects, like Pulse and Fireball.
"Swipes" holds the attack animations for all of the weapons. Note that not every weapon has different animations for different enchantments: the Warhammer and Cat-o-Nine-Tails has only one animation.
"Traps" contains all floor graphics, including roof pig and the teleport runes.
There's a few others too, such as changing the picture on the main menu. I recommend you start with these, though.
Question is still open, any help is appreciated.
I can't imagine it's structured differently, and the file must be there since you can play the game and see all the sprites. It should be the first folder inside the game folder, so that's very strange.
On Mac you have to right-click on the application and select open package contents.
