From my past experience, planning out my bigger levels helps me get motivated to finish them. Doing a small task every day helps you don't get overwhelmed. Working on a bunch of different projects is fine to do, sometimes it isn't possible to stay focused on one project, so work on a different one. Maybe you can come back to it later if you get motivation again.
Motivation can come and go, it depends from each person.
Fails/Uncompleted levels:
*Bank Robbery
*Trampoline Raid
*Random Zombie themed garbage
*Like 3 different bossfights
*chapters 4 & 5 remakes
Some yeah, even with a plan it is hard to actually work on a long level.
