I've spent hundreds of hours modding this game. It's currently not doable and I highly doubt it will ever be.

You can make your own items if you want to. It's also possible to make them craftable and give them your custom name, icon, description, create new recipes etc. However, the modding ends here. Since items like coffee, tabacco etc. does not really exist in physical form inside the game (they are pretty much just icons and numbers) you can't really edit nor create meshes. However, when it comes to beds, doors and things that are actually real items, there's still nothing you can do about them. You are not able to remove them, edit them or replace them.
