Color Settings reset to default everytime I go to the Single-Player level menu in Moddable Version
Everytime I enter the Single-Player menu in the main menu of the moddable version, my color settings reset to default by itself. I tried verifying my game cache but that didn't fix it. I checked the console for any errors but I didn't find anything. I checked to see if this bug happens in the Non-moddable mode and it seems to not reset itself there.

This started happening around a few weeks ago and I have no idea whats causing this bug. Not only that, some of the settings in the simulation mode in the editor such as the crosshair and the HUD also reset itself now.

Do you still have the old version of Raider Gamemodes installed (V1.7)? Try uninstalling that if you do, as that version has a script that messes with the color settings (specifically saturation). While it's only supposed to do that when switching on and off of a specific gamemode... the implementation is more than likely broken, which is why I trashed it in the first place.

The settings resetting in the editor has always been an issue. Essentially, the first simulation you run after booting up the editor will use the settings you defined... but every other simulation past that will use the default settings.

Yeah, it turns out I have an older version of your Raider Gamemodes installed. I removed it and did a test to see if it fixed the issue as it turns out it did fix it.
