Well I am no specialist in the lore but I think with chainmail in this game we sort of have an issue. Take a look at the full armored greatswords mod because some of the models have chainmail at the back and it somehow looks odd mostly when all visual enhancements are enabled. So I think maybe some chainmail but not a lot, maybe also a bit of plate like empire swordsmen have - anything should be ok to change their current dull looks. That said anything that is done should keep in mind the fact that these are not armored knights but lightly armored soldiers.
