Jeez I have like 80 mods only for immersion, it depends on how hard you like to play, I have realistic weight, no hud, camping and nutrition, better combat, realish npcs and almost every realish mods aside the combat you can start from there and see if it’s not that hardcore, I found it still very easy after 100+ hours but loving it
